Peanut Butter Cookies

Ingredients

  • 1/2 cup butter (1 stick, 4 ounces), room temperature
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1 1/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2 more minutes. Mix in the peanut butter and the egg. Vigorously whisk together the dry ingredients— the flour, baking soda, baking powder and salt—in a separate bowl. Stir the dry ingredients into the sugar butter mixture.
  2. Wrap dough in plastic and refrigerate at least 3 hours.
  3. Preheat oven to 375°F (190°C). Shape the dough into 1 1/4 inch balls. Place the balls of dough about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork.
  4. Bake until light brown, about 9 to 10 minutes. Remove the cookies from the oven and let cool in their baking sheets for a minute. After a minute, transfer the cookies to a rack to cool completely.
  5. For chewier cookies, bake at 300°F (150°C) for 15 minutes.

Ingredients

  • 2 1?4 cups flour
  • 3?4 cup sugar
  • 3?4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup butter
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 2 cups butterscotch chips (1 bag)

Instructions

  1. Mix together the flour, salt and baking soda in a small bowl, set aside.
  2. Cream the sugars and butter together, add the vanilla.
  3. Add the eggs one at a time.
  4. Slowly add the flour mixture.
  5. When completely mixed, add the butterscotch chips.
  6. Drop by the spoonful onto an ungreased cookie sheet.
  7. Bake 8-10 minutes at 375F degrees.

  • 1/2 lb butter, softened (2 sticks)
  • 2 large eggs, beaten
  • 1 cup sugar
  • 4 cups flour
  • 2 tablespoons baking powder
  • 2 tablespoons vanilla
  • 1 3/4 cups powdered sugar (1/2 of a 1-pound box) for Icing
  • 2 tablespoons milk for Icing
  • 1 tablespoon anise extract or 1 tablespoon vanilla or 1 tablespoon fresh lemon juice for Icing
  • colored crystal sugar, to decorate

Instructions

  1. Cream butter and sugar until soft and creamy.
  2. Add eggs and vanilla, mixing well.
  3. Combine flour and baking powder, then blend into the butter mixture.
  4. Break off small, walnut sized pieces of dough and shape into bows, braids, knots,"s" shapes, or any shape you desire.
  5. Bake in a preheated oven at 375 F until lightly browned, about 15-20 minutes.
  6. Cool on wire racks,then ice as desired.
  7. Icing: Blend sugar and your choice of flavoring, adding milk slowly to form a soft, smooth icing (some ice the cookies while they are still warm, others wait until they are cooled).
  8. Sprinkle with colored sugar or confettini (tiny multi-colored sprinkles) before icing sets.

I really wanted to coil them but I found it hard to work with, so I just balled them up and then thumbprint smooshed them.

Italian Chocolate Cookies (Tu Tu)

Ingredients

  • 1 cup sugar
  • 1/2 cup cocoa
  • 2 tbsp cinnamon
  • 1/8 tsp. salt
  • 1/8 tsp. ground allspice
  • 1 cup coffee (liquid)
  • 1/2 cup melted Crisco
  • 1/4 cup chopped walnuts
  • 1/2 tsp. vanilla
  • 1/4 cup grape jelly
  • 1 Tbsp. baking powder
  • 4 cups flour

Instructions

  1. Mix sugar, cocoa, cinnamon, salt, and allspice together in a large bowl.
  2. Add lukewarm coffee and melted Crisco.
  3. Add vanilla, walnuts, and jelly.
  4. Add 1 cup of flour and baking powder. Keep on adding flour, 1 cup at a time, until dough is formed. The dough should be stiff, but sticky.
  5. Take by tablespoons and roll to form a ball in your hand. place on slightly greased cookie sheets.
  6. Bake in 4000F oven for about 10 minutes. Remove from oven and cool. Frost when completely cool.
  7. Frosting: Make a runny glaze with the confectionery sugar and milk. Toss cookies in the bowl of frosting, remove and dry on wax paper. Store in an airtight container.

  • 5 cups all-purpose flour
  • 4 egg yolks
  • 3 teaspoons baking powder
  • 1 pound shortening
  • 1 cup milk
  • 4 (.25 ounce) packages active dry yeast
  • 1 teaspoon salt
  • 1 cup any flavor fruit jam
  • 1/3 cup confectioners' sugar for decoration

Instructions

  1. Warm milk to just above room temperature. Dissolve the yeast in the milk, set aside. In a medium bowl, stir together the flour, salt and baking powder. Cut in the shortening until the mixture is mealy. Stir in the egg yolks and milk mixture. Knead the dough together and then refrigerate overnight.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Dust a clean, dry surface with confectioners' sugar. Knead the dough for a few minutes. Carefully roll out your dough to 1/4 inch thickness. Cut out circles with a cookie cutter.
  4. Bake for 12 to 15 minutes in the preheated oven. Do not store in an airtight container or they will become soggy.

  • 6 egg yolks
  • 1/2 pint sour cream
  • 3 tablespoons white sugar
  • 1 tablespoon vanilla extract
  • 1 tablespoon whiskey
  • 3 cups all-purpose flour
  • 1 cup vegetable oil for frying
  • 1/3 cup confectioners' sugar for decoration

Instructions

  1. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  2. In a large bowl, beat together the egg yolks, sour cream, white sugar, vanilla and whiskey until smooth. Stir in flour until dough is stiff enough to knead. Turn out onto a floured surface and knead until smooth. Knead in additional flour if necessary. Divide dough into 3 or 4 pieces and roll each ball on floured surface. Cut into strips about 3 inches long then make a slit long ways down the middle. Pull one of the ends through like a bow.
  3. Place into hot oil and deep fry until golden brown. Let drain on paper towels and sprinkle with confectioners' sugar.

  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 6 tablespoons confectioners' sugar
  • 2 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1/3 cup confectioners' sugar for decoration

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, cream butter and vanilla until smooth. Combine the 6 tablespoons confectioners' sugar and flour; stir into the butter mixture until just blended. Mix in the chopped walnuts. Roll dough into 1 inch balls, and place them 2 inches apart on an ungreased cookie sheet.
  3. Bake for 12 minutes in the preheated oven. When cool, roll in remaining confectioners' sugar. I also like to roll mine in the sugar a second time.

Ingredients

  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1/2 cup molasses
  • 1 egg yolk
  • 2 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ginger
  • 1/2 teaspoon ground nutmeg

Instructions

  1. In a large bowl, cream together the margarine and sugar until smooth. Stir in molasses and egg yolk. Combine the flour, salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mixture until smooth. Cover, and chill for at least one hour.
  2. Preheat the oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into desired shapes with cookie cutters. Place cookies 2 inches apart on ungreased cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven, until firm. Remove from cookie sheets to cool on wire racks. Frost or decorate when cool.
